Dave its not just the voltage of the sims, but there capacity also, 3g sims are slightly larger than 2.5g sims. 3 have realised they need to exploit this to the max and so it confuses non 3g phones, with only one exception that I can find, nokia 8310 (little phone with black and white screen) it works.
All other phones will just have a message saying invalid sim card. But as Dave correctly says don't do it for long or you will destroy your phone, and don't complain to se as its not their problem nor is it 3s or O2s

Funny you mention that about the 8310 - I also have seen it working in a Nokia 6100, and apparently the new Nokia 3220 (silly X-Factor phone) also works with a 3 USIM.

I am not sure about the usim in your country but several people tried and successfully use 3-3G USIM in K700i in Hong Kong. (However if 3 do not run 2G operation in your country, it certain won't work in your case.)
However, some said that the battery went out faster. May be the 3G card try to find its home network 3-3G but certainly impossible in a 2G phone.
