AFAIK, the Mac mini doesn't have a dedicated mic port which supports dynamic mics. I think you will need some firewire peripherals/adapters to provide you with video and audio input.

Right, I'm here now! Somehow I missed this thread yesterday...
Although a Mac mini will run Final Cut Pro ok I'd definately recommend 1Gb RAM. The more RAM the better for video editing. Also, the hard drives on the Mac mini are quite slow, 5200rpm if I remember rightly... Although they're quick enough for editing obviously the quicker your drives the better, when shunting video data around.
You could buy an additional external Firewire drive so you can transport your projects easily from Mac to Mac if needed, and benefit from faster speeds and more space. You'd soon fill the 80gb drive when video editing, making DVDs.
How high end do you want to go? My eMac (which is basically the same spec as a mini) is fine for editing in iMovie and Final Cut Express. I also use it for After Effects work and making DVDs with motion menus etc. and its fine. But if you want to do higher-end video a more meaty Mac would be better.
The Mac mini doesn't have a sound in port, just headphone/line out. To get sound in you'd need to invest in a USB sound in gadget.
You may want to look at the eMacs (which are rumoured to be updated very soon) as they have audio in, 3x USB 2, 2x USB 1, 2x Firewire, keyboard, mouse and 17" CRT built-in for a little over £600.

ive taken a look at the imacs, they are a bit more expensive but they offer G5 power with everything i basically need except for memory.....you would think that they would give you at least 512 if youre gonna be paying 2.5grand for the pc...its gonna cost me another 300 bucks to upgrade to 1gb memory....
so overall it will be just under 3 grand....hmmm thats alot
